Dunedin's Bon Appetit is offering both a buffet and a four-course dinner for Easter Brunch. Along with Easter favorites everyone loves, try some unique dishes like Easter Ham with Orange Brown Sugar Glaze, and House-Cured Salmon with Herbed Croutons. There will also be a Watermelon Salad with Fresh Mint, Feta Cheese, and a Balsamic drizzle. Sea-Guini at the Opal Sands Beach Resort on Clearwater Beach is offering a fabulous Easter buffet. Select from freshly prepared eggs, omelets, and waffles, or chilled shellfish and rawbar. The rosemary roasted leg of lamb is served with blueberry mint compote and natural jus, and don't skip the cheese, charcuterie, and avocado toast station. A great choice is the famous Easter buffet in the Grand Ballroom at the Birch and Vine on Beach Drive in St. Petersburg. Here you'll find a seafood station including oysters, mussels, pickled shrimp and snow crab claws with all the traditional accompaniments. Carving stations offer a char-crusted New York Strip and smoked lamb rack. Hot items include root beer sliced ham, toasted farro and roasted asparagus with grated egg. For dessert check out the Bananas Foster Flambee station or the dulce de leche Cuban bread pudding. $55 adults, $29.95 for children under 12, and free for children under 4 years old. Call 727-896-1080.

Get a "welcome mimosa" at the Safety Harbor Resort and Spa as kids meet the Easter Bunny and receive an Easter candy gift. Maritana Grille at The Don CeSar

For Easter Brunch this year, the Maritana Grille at the Don CeSar on St. Pete Beach is offering a special a la carte menu that includes corn bisque, a surf and turf selection that includes seared wagyu beef and Georges Banks jumbo scallops. Accompaniments include a parsnip puree, local swiss chard, and roasted marble potatoes. Another option is a seared duck breast with roasted apricots and braised mustard greens. For a special dessert, try the chocolate flan with almond crunch, caramelized cocoa nibs, and cinnamon biscotti. Shephard's Beach Resort is famous for their huge buffets, and this year's Easter Brunch in Clearwater Beach pulls out all the stops. This is a day-long extravaganza starting at 9am and items will change throughout the day. Brunch items will be offered until 230 pm. Enjoy items such as vanilla bean french toast brulee, smoked salmon and swiss quiche, cheese blintzes with fruit compote as well as all the classic breakfast items you love. Entrees will be served all day and include marinated flank steak with chimichurri, freshly rolled sushi, an array of hors-d'oeuvres, vegetables, sides, and salads. Parkshore Grill on Beach Drive in St. Petersburg is offering an Easter Brunch buffet. Start with selections from their extensive seafood bar including house-smoked wahoo, mussels and oysters on the half shell, petit lobster salad, and Gulf seafood gazpacho shooters.  If you prefer items from dry land, graze over the imported cheese board and charcuterie.  Salads including Mediterranean baby kale and orzo pair perfectly with a carved natural leg of lamb and parmesan roasted new potatoes.
